Potassium Bisulfite Solution is a chemical compound with the chemical formula KHSO3. It is used during the production of beverages as a sterilising agent. This additive is classified as E number E228 under the current EU approved food additive.

It is made by the reaction of sulphur dioxide and potassium carbonate. The sulphur dioxide is passed through a solution of the potassium carbonate until no more carbon dioxide is evolved. The solution is concentrated.

•    It is primarily used as a food preservative (e.g., to prevent dried fruit from discolouring) and as an antioxidant. Sodium sulphite is also used in water treatment and photography. 
• Inorganic sulphites and (such as sodium sulphite, Na2O3S) are used in photography, the bleaching of wool, and as preservatives in foods, beverages, and medications. They act as effective antioxidant compounds and are also used in the manufacture of pulp for paper and wood products. Their preservative properties include controlling microbial growth and the prevention of browning and spoilage.

Application: 
·  it is used in the textile industry as a bleaching, desulfurizing, and dechlorinating agent (e.g. in swimming pools). Its reducing properties are exploited in its use as a preservative to prevent dried fruits from discolouring, and for preserving meats. It is used as a reagent in sulfonation and sulfomethylation agent.
